Longing for a Mediterranean vacation this Fall? Why not “whisk together” this fuss-free, simple to make, sweet treat enjoyed across the Mediterranean for generations – no passport or long airport lineups required!
What you will need…
½ cup sugar
1 cup margarine or butter
2 cups fine white semolina (durum wheat)
1 cup flour
5 eggs
3 tsp baking powder
1 tsp vanilla essence
Syrup:
3 cups sugar
4 cups water
1 cinnamon stick (if desired)
juice of half a lemon or half an orange, to taste (if desired)
How to…
- Prepare the syrup by adding sugar to the water and bring to a boil and then let it simmer for about 15 – 20 minutes. If desired, add cinnamon stick and citrus juices while boiling.
A quick tip to see if your syrup is ready: the syrup should coat your spoon while still running off. - Melt butter, set aside to cool.
- Beat eggs in a bowl and then add sugar.
- When the butter is cooled, add it to the egg/sugar mixture.
- Also add the vanilla essence to this egg/sugar mixture
- In a large mixing bowl, sieve flour, baking powder and semolina.
- Incorporate egg/sugar mixture with the dry ingredients.
- Make sure to blend all ingredients thoroughly.
- Place mixture into a greased 2½ – 3″ deep baking dish
- Bake at 350°F for ½ – 1 hour until golden brown (this is an approximate time, oven temperatures may vary).
Serve with your choice of crème fraîche, sweetened whipped cream or ice cream (or my personal favourite, a little bit of each – yummy!)
