Traditionally served over Christmas, these yummy honey cookies are the epitome of a perfect Springtime treat – subtly fragrant with notes of citrus, rich in earthy tones of cinnamon, cloves and sweet honey, and melt in your mouth goodness!
What you will need…
Honey syrup:
2 cups sugar
2 cups water
¼ cup honey
1 Tbsp. lemon juice
1 cinnamon stick
3 cloves (optional)

How to…
Honey syrup:
- Combine ingredients and stir over heat until sugar dissolves.
- Incorporate honey.
- After boiling for 10 minute, strain the syrup to remove the cinnamon stick, rind and cloves.
- Keep the syrup warm while dipping the cookies by simmering over a low heat.

Cookies:
1 cup butter
6 cups plain flour
4 tsp. baking powder
¾ cup caster sugar
¾ cup vegetable oil
grated rind of 1 orange
¾ cup orange juice
How to…
Cookies:
- Preheat oven to 180ºC (350ºF)
- Combine butter and sugar with orange rind until mixture is creamy.
- Add oil to the cream mixture and continue blending until fluffy and fully incorporated.
- Stir in flour and orange juice alternating between the two for an even consistency.
- Gently kneed dough for about a minute or two.
- Portion out about a tablespoon of dough, flatten and shape dough into oval eclipses.
- Place on a greased baking tray and bake for 20 – 25 minutes until tops are golden.
- Allow to cool slightly.
- Dip a few cookies at a time into the honey syrup while the cookies are still warm.
- Once coated with the syrup, remove the cookies, sprinkle the tops with crushed walnuts and allow to fully cool.
